Present State of Knowledge:
Limited information to date indicates that changes in sensory perception are anecdotal and individual (not universal).  

Research Approach:
Evaluate and understand what sensory changes are occurring in weightlessness and their mechanism of occurrence (are certain taste buds affected, is nasal congestion the key, are all crewmembers affected or are their individual variances). A data mining study will identify what has already been studied, and where open gaps remain.

Knowledge about, and potential mitigation strategies for, changes to human palatability.
