Aims:

The Human Health and Countermeasures Element has identified several health promoting nutrients which are best delivered in food sources, or functional foods. It is expected that these nutrients and any nutrients identified in future, will be required to be delivered in the food system to mitigate or prevent health issues.

1.      Measure the amount of each identified nutrient in representative spaceflight foods following processing and predetermined storage time points to establish the current state (this step will only occur for nutrients that are not currently measured in the Nutrition and Processing project.)

2.      Determine the requirements to develop foods that stabilize these nutrients, providing required concentrations in the space food system throughout long duration missions (up to five years).  The results of this task may be used in the future to develop a solicitation, if needed to meet our requirements.

3.      Coordinate collaborations with health and performance groups that may require functional foods as a countermeasure.



Results from this task will inform HHC - Nutritional Biochemistry and Advanced Environmental Health.
