Given the increasing evidence supporting a beneficial relationship between consumption of probiotic bacteria, immunostimulation, and health, an optimal delivery system for probiotics should be determined for spaceflight, where lack of refrigeration limits shelf life and precludes the use of traditional food delivery methods.

Aims: Determine the viability of Lactobacillus acidophilus that is added to non-fat dry milk and rehydrated prior to consumption or provided in a capsule through eight months of storage at -80ºC, 4ºC, and 22ºC and exposure to simulated digestion conditions.
