Aims:
Given recent requirements to reduce the mass of the food system concurrent with efforts to increase health-promoting fruits and vegetables in the diet, it is essential to find solutions that meet both needs. This task will investigate a novel protein-polyphenol complex with the potential to provide mass-reducing meal replacement options with improved quality factors over an extended shelf life, and to increase the concentration of health-promoting fruit and vegetable extracts in a shelf stable food system.

1 – Formulate meal replacement bar with whey protein isolate – polyphenol complexes to meet crew meal macronutritional guidelines and acceptability.

2 – Evaluate texture, phenolic stability, and protein digestibility over a 6-12 month shelf life at 21ºC (current) and 35ºC (extreme) storage conditions.



This task will contribute to gap closure through evaluation of a novel protein-polyphenol complex to provide mass-reducing extended shelf life products with improved texture and nutritional properties.
