Aims:
- To summarize the state of the art packaged food technologies.
- To perform a risk-benefit analysis on using the space environment for food storage.
- To recommend food formulation changes, processes, packages, and environments to obtain a five-year shelf life.
- To identify outstanding technology needs to supplement proposed recommendation.

Description:
The final report indicates that single technology approaches will not extend shelf life to the 5 year requirement for long-duration missions. Improvements in packaging technologies and combinations of alternative processing with reduced temperature storage (hurdle approach) should be considered for synergistic benefit to shelf life. The report contributes to gap closure and risk mitigation by identifying the limitations of current technologies and recommending potential integrated solutions on which to focus further research.
